Alternative protein sources - what about Walnuts

Alternative proteins is big business and is growing as more people look for alternatives to meat. The number of different protein alternatives to meat are growing ranging from soya, pea, insect and cultured meats. However, this article believes that one protein source that has been overlooked is Walnuts. "They have a soft, meaty texture that easily absorbs the flavours of other ingredients, " making it idea to mimic meat. What about a slice of walnut lasagne.

As today’s consumers focus on health & wellbeing, reducing meat consumption is one of their key goals. Yet the use of walnuts as an alternative meat source is relatively unexploited
